Wild Mushroom Risotto with Amandín Organic Chicken Stock

Now it’s mushroom time, we bring you a delicious, easy-to-prepare dish: a seasonal mushroom risotto.


  • Olive oil
  • 2 spring onions
  • 2 cloves of garlic
  • 500g Arborio rice
  • 1/2 l Amandín Organic Chicken Stock
  • 75g butter
  • 200g seasonal wild mushrooms
  • White wine
  • Parmesan cheese


Step 1

Finely chop the spring onions and the garlic and brown them with the oil and a little butter.

Step 2

When they’re lightly browned add the mushrooms cut into large chunks and fry them a little. Then add the rice and fry it all together.

Step 3

After 2 minutes you can gradually stir in the stock.

Step 4

When the rice is soft, take it off the heat and add the butter and the grated cheese.

Step 5

To serve, sprinkle a little finely-chopped parsley and parmesan cheese over it.
