It’s still cold and your trousers are still tighter than they should be. But you really don’t feel like giving up sweet things in this weather. This cocoa pudding will satisfy all your chocolatey cravings with lots of healthy ingredients and not a single gram of guilt. It’s also vegan, and suitable for coeliacs and lactose-intolerant people. Brilliant, right?
As you want to avoid white sugar and switch to a more natural alternative, we’re going to use Los Frutos del Sol Coconut Sugar. And to make it softer and add a little extra cocoa, we suggest Rice Drink with Cocoa, made from UTZ cocoa.
If you can only find firm tofu, you’ll have to add more Rice Drink until you get the texture you want.
For a more innovative twist, you can add a pinch of ground cayenne pepper to your pudding. If you’ve never tried this before, put it on your to-do list.
And to be a little more traditional, you can add a teaspoon of vanilla and some chocolate shavings as a topping.
- 400g silky (not firm) tofu
- ½ cup of Los Frutos del Sol Coconut Sugar
- ¾ cup of bitter cocoa powder
- 1/3 cup of Rice Drink with Cocoa
Drain and chop the tofu and put it in a hand blender pot or a liquidiser.
Add the sugar, cocoa and rice drink.
Whizz up all the ingredients thoroughly until you have an even mixture.
Taste it and correct the sweetness and texture if necessary.
Serve up to 6 portions and add whatever toppings you fancy.
You can keep it in a sealed container in the fridge for up to five days.
Eat in moderation… or not.
