Creamy Mushroom and Onion Risotto

A very easy way to make a nice, creamy risotto, with no need to add cream of any kind is by putting in a little bit of our new Amandín Organic Onion Soup. This will make the dish tastier and above all creamier. This results in a tasty, original rice dish. While mushroom risotto is a very common dish, this little trick makes it into a triumph.

You can also vary the mushrooms. Now that it’s the beginning of the mushroom season, you have plenty of alternatives to the typical button mushroom: bloody milk caps, chanterelles (sweet and slightly fruity in flavour), boletus (highly prized for their aroma), king oyster mushrooms and lots more.

So the secret of a good risotto, apart from the ingredients, is in how you cook the rice. It has to be simmered close to boiling, allowing the water to be absorbed and to evaporate.

Ingredients

  • 400 g arborio rice
  • 300 g mushrooms (shiitake and button mushrooms)
  • 1 glass of dry white wine
  • 1 red onion
  • 4 cloves of garlic
  • 1 l Amandín Organic Vegetable Stock
  • 1 glass of Amandín Organic Onion Soup
  • 1 tablespoon thyme
  • 2 tablespoons of parsley
  • 100 g parmesan cheese
  • Black pepper
  • Olive oil
  • Butter
  • Salt

Method

Step 1

Wash the rice thoroughly and set it aside. Peel and finely chop the onion and the cloves of garlic. Clean and chop the mushrooms. Start heating up the stock.

Step 2

Put a little olive oil and a knob of butter in a saucepan. When it’s melted, add the chopped mushrooms, fry them for a few minutes and season with salt and pepper to taste.

Step 3

Add the rice and stir constantly for one or two minutes. Add the white wine and carry on stirring until it’s absorbed.

Step 4

Add a little thyme, stir it and now you can add the onion soup. Stir well for a few minutes and gradually add the hot vegetable stock, one glass at a time.

Step 5

Before taking it all off the heat, grate the parmesan over the pan and sprinkle the parley over it, very finely chopped. Let it stand for a couple of minutes and it’s ready to serve.
