A slightly sweeter variation on the typical rice pudding for summer time.
- 1 litre of Amandín Organic Tiger Nut Drink
- 60g bomba short-grain rice
- 50g brown sugar
- 4 lemon peels
- 1 teaspoonful of honey
- 2 cinnamon sticks
Put the tiger nut milk in a pan with 2 pieces of lemon peel, the 2 cinnamon sticks and the honey.
When it starts to boil, add the rice. Bring it to the boil again, turn down the heat and simmer for half an hour.
Add the sugar and simmer for another half hour, stirring from time to time.
Leave to cool and then put in the fridge.
Serve in a bowl, together with biscuits. Decorate with mint
