Rice with Amandín Organic Tiger Nut Drink

A slightly sweeter variation on the typical rice pudding for summer time.


  • 1 litre of Amandín Organic Tiger Nut Drink
  • 60g bomba short-grain rice
  • 50g brown sugar
  • 4 lemon peels
  • 1 teaspoonful of honey
  • 2 cinnamon sticks
  • mint


Step 1

Put the tiger nut milk in a pan with 2 pieces of lemon peel, the 2 cinnamon sticks and the honey.

Step 2

When it starts to boil, add the rice. Bring it to the boil again, turn down the heat and simmer for half an hour.

Step 3

Add the sugar and simmer for another half hour, stirring from time to time.

Step 4

Leave to cool and then put in the fridge.

Step 5

Serve in a bowl, together with biscuits. Decorate with mint
