Rice Casserole with Vegetables, Prawns and Beans with Organic Vegetable Stock

A recipe taken from VERITAS magazine, ideal for those who like to watch what they eat.


  • 250g semi-wholegrain rice
  • 200g cooked beans
  • 8 prawns
  • 1 l Amandín Organic Vegetable Stock
  • 1 onion
  • 1/2 red pepper
  • 1 green pepper
  • 1/2 cup peas
  • 3 artichokes
  • 2 heads of garlic
  • White wine
  • 3/4 cup chopped tomato
  • Olive oil


Step 1

Wash the vegetables thoroughly, cut the peppers into strips, chop the onion finely and remove the outer leaves from the artichokes.

Step 2

In a pot or a frying pan, brown the prawns for a couple of minutes. Remove and set aside. Do the same with the peppers.

Step 3

Brown the onion in the same oil until it’s golden. Add the finely-chopped garlic and the tomato. Fry it all for about 10 minutes.

Step 4

Add the rice, the artichokes, the peas and the Amandín Organic Vegetable Stock. Cook for 15 minutes and add the beans and peppers.

Step 5

Cook for another 5 minutes and leave to stand for a couple of minutes…
