As usual, Orielo’s manage to surprise us. This time they’re making us a Pumpkin Sponge glazed with Rice Drink with Banana and Strawberry. This is a dessert you can use to surprise your guests. Make this dessert for Christmas with an original touch. This time we use our delicious Rice Drink with Banana and Strawberry. We’ve seen plenty of recipes where pumpkin plays a starring role. Pumpkin sponge is a dessert typical of American cookery. It’s usually made in late autumn and early winter, especially at Halloween, Thanksgiving and Christmas.

 

Ingredients

  • 300g roasted pumpkin.
  • 4 eggs.
  • 200g brown sugar.
  • 100g sunflower oil.
  • 25g olive oil.
  • 250g flour.
  • 1 double packet of baking soda.
  • 1 pinch of salt.
  • 1 tablespoonful of cinnamon.
  • 1/2 teaspoonful of nutmeg.
  • 1/2 teaspoonful of ginger.
  • For the glaze:
  • 150g icing sugar.
  • 1.5 tablespoonfuls of Rice Drink with Banana and Strawberry.

Method

Step 1

Peel the pumpkin and remove all the seeds. Cut it into medium-sized pieces and put in a microwave-safe glass bowl with a lid. Cook for about 8 minutes at 800W. Then mash it up with a fork or a food mill. Set about 300 grams aside.

Step 2

Beat up 4 eggs in a bowl with sugar for a couple of minutes and then add the oil (100g sunflower and 25g olive) and then carry on beating for about five minutes longer until the mixture is foamy.

Step 3

After this add the cinnamon, nutmeg and ginger. Also add the baking soda, the pumpkin and a pinch of salt. Mix it all together and then beat it for a while.

Step 4

Finally, add the flour, having first sifted it, and fold everything together. When it is all thoroughly mixed together put it in the tin, after greasing it or lining it with baking paper. Tap the tin a few times to make the bubbles rise up from the bottom.

Step 5

Preheat the oven to 180ºC for at least 10 minutes and then bake it for about 45-48 minutes.

Rice Drink with Banana and Strawberry glaze:

In a bowl mix 150g of icing sugar and one and a half tablespoonfuls of Rice Drink with Banana and Strawberry. If it looks too thick, add a little more of the drink. After that just sprinkle the glaze over the sponge.
