Fancy a breakfast that’s as healthy as it is delicious? Today we suggest you try making pancakes – perfect for breakfast. Similar to a crepe, these are known as “panqueques” in Argentina, Uruguay, Chile and Peru, where they are popular.

As well as being healthy, this dessert is ideal for coeliacs, as it doesn’t contain gluten. More and more people are being diagnosed as gluten-intolerant, so we’ve decided on a gluten-free recipe. With this recipe we offer you an alternative so that you can eat pancakes without any problem. Moreover, as they’re homemade, you can prepare them to suit your tastes.

To make this recipe we used Amandín Organic Rice Drink. You can decorate your pancakes with fruit or with our nut creams. What about using Organic Date Cream with Almonds?

Ingredients

  • 6 spoonfuls of rice flour
  • 2 spoonfuls of maize flour
  • 2 spoonfuls of olive oil
  • 1 organic egg
  • 200 cc Amandín Organic Rice Drink

Method

Step 1

Mix the maize flour and the rice flour, add the oil, the lightly beaten egg and the Amandín Organic Rice Drink.

Step 2

Blend to make an even paste.

Step 3

Leave to cool for 1/2 hour in the fridge.

Step 4

Heat up a frying pan, with a little oil to stop the pancakes sticking.

Step 5

Pour a little of the mixture into the pan to form pancakes of the desired size. Cook each side until golden.

Step 6

Decorate with fruit or Amandín Nut Creams.
