How do you feel about preparing a vegan plum cake? It may be that when we say plum cake you don’t really know what we’re talking about. So we’ll just explain that we mean a sponge cake made with dried fruit and raisins. We’re going to make it in a slightly different way. We have our contributor Alicia back with us to give us an absolutely delicious recipe.
In her blog, A Mi Lo Que Me Gusta Es Cocinar, you’ll find some marvellous recipes. You’ll never get tired of finding ideas to update your diet. This time we’re going to use our Organic Rice Drink with Cocoa. Because drinks aren’t just for drinking.
- 250g flour
- 200g sugar
- 90ml sunflower oil
- 150ml Organic Rice Drink with Cocoa
- Grated peel of one organic lemon
- ½ sachet of powdered yeast
In a large bowl mix the flour, the sugar, the oil, the Organic Rice Drink with Cocoa and the yeast.
Beat with the blender until you get a smooth cream without any lumps.
Add the lemon peel and stir with a silicon spatula.
Heat the oven to 165°C. Line a cake tin with baking paper.
When the oven is hot enough, put the dough into the tin and put it in the oven. Bake for 45-50 minutes. It’s very important not to open the oven during at least the first half hour. To see whether the plum cake is ready, prick the centre with a toothpick. If it comes out clean it’s done.
Take out of the oven and leave to stand for 5-10 minutes. Remove from the tin and leave to cool on a wire rack. It will keep for a week in a tightly-closed tin.
