This Friday, we’re going to prepare a cream of pea soup. Peas are said to have reached Europe from Egypt or Palestine. They’re a tuber[S1] dating back to prehistoric times, and it is said they were around in the year 7,800BC.
So peas have been there throughout our history, and now we’re going to make the most of them to prepare an absolutely delicious cream soup with our Organic Vegetable Stock.
- 2 onions
- 1 leek
- 100g peas
- White pepper
- 1 litre of Amandín Vegetable Stock
- Serrano cured ham
Brown the onions and the leek with a little oil.
Add the stock and when it comes to the boil add the peas, salt and white pepper. Leave to simmer for about 20 minutes.
Blend and add stock to taste until you get the texture you want.
It can be served in a bowl with pieces of ham, which you can fry lightly beforehand.
