Turrón? Isn’t that a classic part of the Christmas spread in Spain? Yes it is. So we’re going to make some. It’s going to be delicious, and 100% vegan if we choose the right chocolate. You’ll see how well it comes out. The truth is, things made at home with love taste a thousand times better. Turrónes are a 100% traditional dessert in Spanish cooking, and everybody in Spain knows that it’s a sweet made with one of two ingredients – honey or sugar. They also traditionally include almonds, but nowadays many different varieties have appeared. We’re going to used puffed rice and our Rice Drink with Cocoa.

They’re typical all over Spain, but where the most are made is in Alicante, Valencia, Lleida, Jijona, Casinos and Agramunt, though today there are many kinds of turrón, some with whole almonds, others with ground almonds and so on. What’s your favourite turrón?


  • 300 g lactose-free dark chocolate, about 52% cocoa.
  • 40 g 74% cocoa dark chocolate.
  • 3/4 cup of glacé sugar.
  • 100 ml Rice Drink with Cocoa.
  • 8 g vanilla sugar.
  • 1 cup of chocolate puffed rice.


Step 1

Line a square or rectangular tin with baking paper, folding the corners so that the sides are completely covered.

Step 2

Bring the Rice Drink with Cocoa to the boil in a small casserole together with the glacé sugar and the vanilla sugar. Stir slowly until it comes to the boil, then take it off the heat.

Step 3

Add the different types of chocolate and stir well until they dissolve.

Step 4

Let it cool for about 30 minutes, stirring from time to time. The aim is for it to cool but be malleable.

Step 5

Add the puffed rice to the chocolate and mix carefully. You can also use almonds or hazelnuts instead of the puffed rice.

Step 6

Put the mixture into the tin and smooth off the top. Leave it in the fridge for at least 4 hours.
