If you’d like to prepare a meal to impress, a very good option is wrapped anglerfish. This way of preparing it adds a special touch to the dish that your guests are sure to love.

Wrapping is a culinary technique that consists of covering a piece of meat or fish in different kinds of bacon to add juiciness while it’s being cooked. This gives a juicy, very tasty dish. It’s generally done with meat fillets or fish.

We chose anglerfish because it’s a fish with outstanding, particularly tasty flesh. Every part of it is used; the tail is eaten and the head is used for soups and stocks. It’s a white fish and lives in salt water. It pulls itself along the seabed by moving its pectoral fins in order to find food.

In Asturias it’s known as Pixín. The name anglerfish comes from the “bait” at the end of an appendage sticking out of its head, with which it attracts smaller fish, which it then eats.

To go with the anglerfish, an onion soup sauce. With Amandín Organic Onion Soup you can prepare a delicious French-style soup as well as enriching other dishes like meats, risottos and more.


  • 800 g anglerfish
  • 8 rashers of bacon
  • 250 ml Amandín Organic Onion Soup
  • 1 onion
  • Olive oil
  • White wine
  • Saffron
  • Salt


Step 1

Remove the skin and bones from the anglerfish and cut it into 8 medallions. Wrap each anglerfish medallion in a rasher of bacon, securing them with kitchen string or toothpicks, whichever is most convenient. Set aside.

Step 2

Chop the onion and fry it in a frying pan. When it’s browned, add the anglerfish medallions and when they’re nearly done add the white wine and the onion soup. Simmer for a few minutes and turn off the heat.

Step 3

For serving, put the onion sauce in the bottom of the plate with 2 wrapped medallions on top of it (carefully removing the string) and sprinkle some saffron and salt flakes over and around the fish.
